The name BIRIKA comes from the Basque expression bihotzik gabeko birika, meaning “a lung without a heart” — a reminder that even what keeps us alive can lose its soul if it’s not cared for. So we gave the lung a soul. We turned it into an experience. Into honest cooking. Into art. Into wild cocktails. Into good vibes with edge.
